Onion quiche and caramelized peppers
I had some caramelized peppers (recipe HERE) that I had made for some canapés and I thought that the same sweet sweet taste would be good in a Quiche and no, I was not wrong. It was delicious and I encourage you to try it! Irresistible!
INGREDIENTS : (For 2 medium molds)
- 1 sheet of broken dough
- 2 large onions
- red caramelised peppers
- yellow caramelized peppers
- 3 eggs
- 2 yogurts Greek natural sugar-free
- salt
- olive oil
- 100 gr of grated cheese (emmental or the one you like)
ELABORATION :
The first thing to do is to make candied or caramelized peppers. You can find the recipe HERE
Peel the onions and roll them into thin julienne. We put a pan on low heat with a teaspoon of olive oil and we poach over the simmering onions.
We preheat the oven to 200º
We polish the molds with a little bit of olive oil. We stretch the broken dough and line the molds with it. We puncture the base with a fork, cover with baking paper, put on a weight (I use some chickpeas that I have only for that use) and bake for 10 minutes.
We beat the eggs with yogurt and pepper.
We cover the broken dough with the poached onion and spread the caramelized peppers over it. We pour the mixture of yoghurts and eggs and cover with a layer of grated cheese.
We bake at 200º between 20 and 30 minutes. They will be made when we puncture with a skewer and it comes out dry.
If we see that during the baking, the edges of the broken dough are browned excessively, we cover it with a sheet of aluminum foil until the cooking is finished.
We serve tempered.
NOTES:
In my quiche I always use natural yoghurts (more similar to crème fraîche), instead of cream, because of that health and calories. But if you prefer to use cream, 200 ml will be enough for this recipe.
