Strawberries with yogurt mousse

We can already find the first strawberries in the markets. At first I miss seeing them, it seemed too early, because I associate spring with this fruit, but as I read there are varieties that bloom from late winter to early summer. I thought they would not know anything and still I could not resist taking a kilo box, but the truth is that if they are not as aromatic and tasty as spring, they are very rich and have enough flavor. To make this recipe I cooked them and the aroma in my kitchen was a delight.

The recipe, as usual, simple and very tasty.

INGREDIENTS (for two glasses)

  • 14 strawberries
  • 4 tablespoons sugar icing (or blanquilla)
  • 1 natural Greek yogurt without sugar
  • 1 egg white
  • 1 pinch of salt
  • 1 envelope of vanilla sugar or vanilla extract
  • water

DEVELOPMENT:

We wash the strawberries and we remove the leaves.

We cut in cubes l2 strawberries (the other two are reserved for decorating ) and put them in a saucepan on the fire along with the vanilla sugar and about three or four tablespoons of water. Let cook 5 minutes over low heat, enough to make a little, but still retain the shape and texture a little firm. Remove from heat and let cool.

Beat the yogurt with 3 tablespoons of sugar, until it has a creamy texture.

We mount the clear to the point of snow with a pinch of salt, when it is almost assembled we add a spoonful of icing sugar and keep riding.

Mix cream of yogurt and the white one, with enveloping movements

We mount the dessert, putting in the bottom of the glass the strawberries with their syrup and on top the yoghurt mousse. Decorate with a fresh strawberry and let it cool in the fridge for half an hour.

Happy week!
