Meatloaf

Pastel of meat, cake of mashed potatoes with minced meat or puree to the volcano, which is how we knew it in my house, since it left the oven bubbling as if it were a volcano.

It is a very rich meat cake and nothing complicated to do, if it takes a little more time, for preparing the puree. Of course we always have the option of making a commercial mashed potato

I like to prepare it in advance; I do it and I leave it in the fridge covered with plastic wrap and while we put the table I give it a blow of oven with grill and ready to eat. It is appreciated that when you arrive from work hungry, you do not have to go to cook. The one you see in the photograph, had not yet gone through the oven, that is why it is not gratined.

In my house I serve a generous portion to each diner, and it is single dish, accompanied by a salad; as it fills up a lot.

I hope you have an idea if you do not know what to do tomorrow for lunch or dinner.

INGREDIENTS:

  • 1/2 Kg minced meat (in this case veal)
  • 2 cloves of garlic
  • 1 onion
  • 1 red pepper
  • 1 green pepper
  • Homemade fried tomato (about 250 g)
  • 4 or 5 potatoes (according to size)
  • 1 egg
  • butter
  • Grated cheese
  • Olive oil
  • Salt
  • Pepper

ELABORATION:

We cut the peppers and onion into small squares and poach them in the pan with a spoonful of oil. Add the chopped garlic, so that it is brown.

When the vegetables are already sautéed, add the minced meat and a medium high heat without stop stirring, we fry it well. We add the fried tomato, stir and let it be done for about five minutes over medium low heat.

While we both make the mashed potatoes. We put the potatoes in a saucepan covered with water and salt, we cook them. When the potatoes are cooked, we peel them and go through a mill. Add pepper, an egg and a teaspoon of butter to the puree. We mix very well.

We pour the meat and vegetables in a mold suitable for the oven, cover with the mashed potatoes and sprinkle with grated cheese.

We bake in a preheated oven at 200º heat up and down with a grill, until the surface is golden brown
