Zucchini fritters with aromatic




There is another one of zucchini, we have never taken as many as this year, and with how rich they are you have to make the most of them.
My aromatics are precious too and nothing better to give courgettes a special flavor.




Zucchini fritters with aromatics

1 kg. of zucchini
4 eggs
2 tablespoons of rice flour
2 garlic
1 bunch of basil
1 bunch of chives
1 bunch of lemon thyme
Ground black pepper
Salt
Oil

We wash, dry and cut the ends of the zucchini. We grate them and leave them in a bowl with a little salt for 30 minutes to release the water.
We beat the eggs with a little salt.
Chop the garlic and aromatic herbs and add the beaten eggs. We also put some ground black pepper and 2 tablespoons of rice flour. When we have mixed it, we add the courgettes well drained, we integrate everything well and let it rest 30 minutes in the fridge.
We put a little oil in a pan and heat it with spoonfuls of the mixture, fry until golden brown on both sides.
Let the excess oil drain on kitchen paper.

For my taste they are cooler.
