I leave a cake of one of the thousands of recipes that my mother collected me For many years, it is delicious. If you like the lemon flavor this is your sponge cake.





Cake with lemon frosting

4 eggs
150 g. of sugar
100 g. of soft olive oil
150 ml. of milk
Lemon zest
300 g .of flour
1 of yeast

For the glaze:

100 g. of butter
200 g. of icing sugar
Juice of 1 lemon

We beat the eggs with the sugar and without ceasing to beat we are adding the oil, milk and lemon zest.
We incorporate the leaven and the flour little sifted little and mix with a spatula with enveloping movements.
Grease a mold with butter and sprinkle with flour, pour the dough and bake in a preheated oven at 180º for 40 minutes. Let cool.

To prepare the frosting we beat the softened butter with the icing sugar, add the lemon juice, mix well and cover the sponge cake. We let cool so that the coverage hardens a bit.
